- 1 onion; chopped
- 3-4 rashers bacon; chopped
- 3 1/2 cups grated zucchini; moisture squeezed out
- 1 1/2 cups grated cheese
- SR flour
- Vegetable oil
- 5 eggs; lightly beaten
- 1/2 pack filo pastry
Preheat oven 180.C
Heat pan on stove top and add onion and bacon and cook until golden. Cool.
In a large bowl add all other ingredients.
Add cooled onion and bacon. Mix well.
Grease a rectangle oven dish.
Remove filo from fridge and brush each sheet with melted butter.
Carefully line oven dish with 4 filo sheets; brushing each one with butter as you go.
Add zucchini slice batter to dish.
Carefully bring in excess filo pastry around sides.
Then cover top of batter with scrunched up buttered filo sheets one by one until batter is covered.
Place in oven 35-40 mins.
A perfect light lunch or easy dinner.
