Zucchini Fries

 

You've got to try these! Get the kids involved and trust me, they will love them! And they're baked not fried...so super healthy

INGREDIENTS

 

1 cup Panko breadcrumbs
1/2 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
salt and freshly ground black pepper
4 zucchini, cut into baton to resemble chips
1/2 cup plain flour
2 large eggs, beaten
olive oil

 

PREPARATION INSTRUCTIONS

 

Preheat oven to 200.C
Place baking paper on an oven tray; set aside.
In a large bowl, combine Panko breadcrumbs, Parmesan and Italian seasoning; season with salt and pepper, to taste. Set aside.
Working in batches, dredge zucchini in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
Place zucchini onto prepared baking tray. Drizzle with olive oil.
Place into oven and bake for 20-22 minutes, or until golden brown and crisp.
Serve immediately. The kids will love it!
