Dessert Cake with Fruit
- 125g butter, softened
- 1 cup caster sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/2 cups self-raising flour
- 1 punnet of blueberries or raspberries with slices of fresh nectarines, peaches or apples
Preheat oven to 160 degrees Celsius.
Grease and line a 20cm cake tin with baking paper.
In a medium bowl combine butter, sugar and vanilla. Beat with an electric mixer until light and creamy.
Add the eggs and beat after each addition.
Fold in flour until combined. Pour the mix into the prepared tin and top with the fruit. Sift icing sugar over top.
Place in the oven and cook for an hour.
The middle of this cake is deliciously soft and perfect, and the outside has a chewy crust. Enjoy!
