Lamb and Hummus with Cauliflower Steak

Slice one head of cauliflower like you would a loaf of bread, creating cross sections of the cauliflower.

Heat oven to 200.c

Add cauliflower to oven tray and drizzle with olive oil, salt, pepper and Moroccan seasoning. Cook in oven for 20-30 mins.

Meanwhile heat olive oil in pan and add 700g lamb mince, breaking it up to cook evenly.

After 4 mins add 3 cloves crushed garlic, salt, pepper and 2 tblsp Moroccan seasoning and cook a further 3 mins or until cooked.

Place cooked cauliflower steaks on each serving plate with a generous smear of hummus. Add baby spinach leaves, slices of red onion and lamb mince.

Sprinkle with fresh parsley and mint along with a dollop of Greek yogurt.
