Easy Pumpkin Mash
Halve a butternut pumpkin (this was a very large half or use two small halves)
Scoop out seeds with a spoon.
Drizzle olive oil, salt, pepper and add 2 garlic cloves.
Cook in 200°c oven 1-1/2 hours or until cooked (depending on size of pumpkin)
Voila! It comes out gnarly and caramelised. Let cool.
Scoop out all the flesh and add to serving bowl. Squeeze out garlic flesh.
I love eating the skin too!
Mix pumpkin until smooth(ish) and add a little butter and chives.
