Avocado Salad Dressing

Ingredients

  • 1 ripe avocado, peeled and pitted
  • 1 half red onion
  • 1 clove garlic
  • 2 Tbsp fresh lemon juice
  • zest of 1 lemon
  • 2 Tbsp red wine vinegar
  • 5 – 7 Tbsp water
  • 2 Tbsp olive oil
  • 1 handful  baby spinach leaves or coriander leaves
  • 1 handful parsley
  • salt & black pepper to taste

Method

Blend everything together in a food processor or high speed blender until smooth.

Add extra water if you want a thinner consistency, stir well.

Store in a clean jar or airtight container for up to 5 days.
