Chilli Parmesan Potato Smash
- 500g-1kg baby chat potatoes
- Olive oil
- ½ – 1 tub sour cream
- ½ cup chicken stock
- 1 tbsp of crushed chilli and garlic paste
- ½ – 1 cup parmesan cheese
Preheat oven to 200 degrees.
Boil potatoes until cooked. Drain and add to baking dish. Squash each potato with the back of a spoon until smashed.
Drizzle with olive oil and salt and pepper.
Pour over sour cream, then chicken stock and crushed chilli and garlic paste.Sprinkle with parmesan cheese.
Cook in oven 15-20 minutes or until golden.
