Loaded Sweet Potatoes
Peel and cut a sweet potato (approx. 1kg) into chips or wedges.
Drizzle with olive oil, 1 tsp paprika and 2 tsp cumin, salt and pepper.
Roast on 200.C for 20-30 mins or until crunchy.
Remove from oven, put in oven proof bowl and layer potatoes with grated cheese and 400g can red kidney beans.
Cook in oven 10 mins or until cheese is golden.
Remove and add tablespoons of sour cream and sprinkle with fresh coriander.
Serve as a snack or as a side dish with roast lamb or pork.
