Avocado and Bacon Carbonara

Cook 400g of your fave pasta in boiling salted water.

Combine 3 eggs and 1/2 cup grated parmesan cheese in a bowl. Season.

Pan fry 3-4 rashers of chopped bacon until golden and cooked and reduce heat to low and add 2 cloves finely chopped garlic.

Cook for 30 sec or until fragrant.

Add the pasta to the pan and toss to coat.

Remove from heat and add the egg mixture and stir, stir, stir! Ensure the egg mixture doesnt scramble.

Add one chopped avocado and chopped chives.

Serve.
